White Chocolate Dipped Peeps with Sprinkles

Easter is one of my favorite holidays! It is my favorite for a few reasons 1) Because of Jesus! 2) Cute Springtime Easter Outfits, 3) Family Gatherings, 4) Easter Egg Hunts, 5) EASTER CANDY! I love the special seasonal candy that you can only get at Easter time.

Speaking of Easter Candy – Can we just take a moment to talk Peeps. You know, the sugar coated bunny shaped marshmallow candies. I was totally shocked last Easter when I bit into an orange Peep, only to discover it was an orange cream flavored marshmallow. When did peeps add flavoring to their candy?! This year, as I was cruising the Easter candy aisle, when I discovered MORE FLAVORS! Here is the 2021 Peeps flavor line up: Hot Tamales, Cotton Candy, Party Cake and my kids favorite – FRUIT PUNCH!

This is a really fun recipe – well, it’s more like creative idea to try with your Peeps this Year. It is really easy, fun and when you put them in a box, it makes for a really cute presentation.

Here’s What You’ll Need:

  1. Peeps – You can use Chicks or Bunnies, or mix it up.
  2. White Melting Chocolate – (use melting chocolate, not baking chips. Trust me.)
  3. Sprinkles
  4. Craft Crinkle Paper
  5. Pastry Box ( we got ours from Wal-Mart, in the cake decorating section.)
  6. Spring Time Decor – optional – you can decorate the outside of your box!

Putting It All Together:

  1. Melt White Chocolate according to the package directions.
  2. Dip Peeps in White Chocolate
  3. Then dip the peeps into the Sprinkles
  4. Let them cool and harden on a piece of wax paper.
  5. The Peeps will cool pretty quickly. At this point you can eat them OR you can place them in a box and use springtime decor on the top of the box.

TIP:

Try a White Chocolate Covered Peep S’MORE!!!! Just melt 2 Peeps on a plate in the microwave for 10 seconds. Using a spoon, gently remove peeps from plate and place them inside 2 graham crackers. And BOOM! You’re Welcome!

SOY SRIRACHA DEVILED EGGS – An Exciting New Twist on a Classic Recipe!

If you are looking for a way to get rid of your left-over hard boiled Easter eggs – Have I got the recipe for you!

Soy Sriracha Deviled Eggs are packed with flavor.  They are what I like to call “next level” deviled eggs! These creamy, spicy, salty delicious bites are sure to spice up your Springtime. If you like deviled eggs + Asian inspired foods you will have to give this recipe a try! The only bummer about this recipe is the WAIT time! 

These Deviled Eggs are really easy to make, and you might have all the ingredients on hand already! Also be sure to scroll all the way to the bottom for an awesome tip!

Recipe:

Makes 12 Deviled Eggs

Prep Time:  4hrs. – Overnight. Assembly:  Less than 10 min.

2 C. Low Sodium Soy Sauce

6 Hard Boiled Eggs

2 Tbs. of Sriracha (you can add more or less depending on your desired spicy-ness)

½ C. Mayonnaise

¼ Tsp Black Pepper

Dash of Salt – 

1/2 Tsp Smoked Paprika

Chives or Green Onions to Garnish.

Directions:

Peel, cut and divide the egg whites from the egg yokes

Soy Sauce Egg Whites:

Place egg whites into a deep dish.  Pour the soy sauce over the egg whites until fully covered.  Note:  If your eggs are not fully covered, you can flip your eggs halfway through the process.

Soak your egg whites in the refrigerator 4 hours up to overnight.  Note: Less soaking time = less flavor and lighter color egg whites.  More soaking time = more flavor and darker color egg whites.

Allow the egg whites to soak and absorb the soy sauce. You can flip the eggs after a few hours

Sriracha Filling:

Mix egg yolks, mayo, sriracha, pepper, and salt (egg whites will be salty – but you still need to season your Sriracha egg yolk mixture– just go slowly, you can always add more salt if needed.)

Blend the egg yolk mixture together until smooth and there is no lumps.

Putting It Together:

Drain eggs and rinse off any left-over soy sauce.  Pat dry egg whites.

Add sriracha egg yolk mixture into a piping bag and squeeze mixture into the center of the egg whites. 

Garnish with chives and more Sriracha.  Serve and Enjoy!

Homemade Boba Drinks

Our family loves boba! Two things we do not love about going out to get Boba are the long lines and how expensive it can be for a family of five. So to remedy that – we have been trying out different kinds of boba combos from home! It has been so fun to experiment with the kids in the kitchen. As a mom, I also like being able to control how much sugar goes into each drink. Here are our top two favorite recipes along with our recommendations for the best homemade boba. – You can also check out our YouTube video linked below for the visual details!

Blueberry Fruit Tea Boba with Cream Cheese Foam

2 Bags of Blueberry Tea (we used Celestial Seasonings Multi Pack – The blueberry tea only comes in their multi pack)
1 Bag of Peach Tea (Optional – I find the peach just enhances the blueberry flavor)
Sugar. –  Sweeten to your liking.  (you can also sweeten with honey or simple syrup or use a sugar substitute)
Directions:
Pour boiling hot water over tea bags . Seep blueberry and peach tea in hot water for 5 min.
Remove tea bags and add sweetener of your choice. 

Cream Cheese Foam

2 Tbs of Cream Cheese (make sure cream cheese is at room temperature.)

3 Tbs of Powder Sugar

4 Tbs of Heavy Cream

1 Dash of Salt (optional)

Directions: 

Mix Cream Cheese and Sugar until smooth.  Add heavy cream to the mixture and blend until foamy.  Note:  You want the foam to still be in liquid form.  Do not over mix.  You are not making whip cream it is the texture of thick and foamy half and half.   

PUTTING IT ALL TOGETHER:
  1.  Add warm Boba to the bottom of the cup.
  2. Add lots of Ice
  3. Pour Blueberry Tea over Ice
  4. Top it off with Cream Cheese Foam
  5. ENJOY!

Ice Coffee Boba

  1. Add Sweetened Condensed Milk to the bottom of the cup
  2. Add warm Boba
  3. Add lots of Ice
  4. Add 2 Shots of hot Espresso
  5. Top it off with Half n Half or Heavy Cream
  6. ENJOY!

We tried a few different kinds of boba – we liked this one best. You have to boil it like you would pasta. The trick is to drizzle honey or sprinkle brown sugar on it. So boil, strain, drizzle and serve!!!
You HAVE to use thick boba straws when drinking boba! These straws were perfect! They are reusable and easy to clean because it comes with two cleaning brushes!

Cake Batter Cookies with Lemon Glaze

Prep Time: 2 min. Cook Time: 10 min.

Pre-Heat oven to 350 degrees

Cookie:

  • 1 Box of Yellow Cake Mix. (For best results use Betty Crocker)
  • ½ Cup of Oil
  • ¼ Cup of Water

Directions:

Mix together  all ingredients until a soft dough forms.  Roll dough into 1 inch balls.  You want to make sure the balls are about the same size so the cookies cook evenly.  Place on a cookie sheet and bake for 10 minutes at 350 degrees

Lemon Glaze

  • 1 Cup Powder Sugar (You can add a ½ cup more if it seems like it’s not going to be enough frosting)
  • 1 Tbs Soften Butter
  • 2 Tbs Lemon Juice. (For best results use juice from a real lemon.)
  • 1 Tbs Milk. (Optional. Use only if you add more sugar to make more frosting.  If you use more lemon juice it will just become too sour)
  • Zest from one Lemon

Directions:

Add Lemon Glaze to cookies while they are still warm. Sprinkles are optional – but always necessary at our house!

Wait for cookies to completely cool and ENJOY.
